Asparagus and Rotini Gratin
A delicious Phase One recipe
Ingredients:
1 packet Ideal Protein Rotini Pasta
1 ¼ pounds asparagus, trimmed and cut into 2-inch lengths (about 4 cups)
2 tablespoons plus ½ cup water
1 packet Ideal Protein Cheddar Cheese Sauce Mix
¼ teaspoon mustard powder
2 tablespoons snipped chives
Instructions:
Cook and drain the rotini according to packet directions, stirring pasta occasionally.
Meanwhile, place the asparagus in a medium casserole dish and sprinkle with 2 tablespoons of water. Cover and microwave just until tender, 3 to 4 minutes. Drain and stir in the cooked rotini. Cover and keep warm.
Combine the cheese sauce mix with the mustard powder in a microwave-safe bowl; stir in the remaining ½ cup water, stirring until smooth. Microwave until hot, but not boiling, about 1 minute.
Pour the sauce over the asparagus and rotini, stir well, serve sprinkled with chives
