Hearty Chicken and Shrimp Gumbo

A delicious Phase One recipe


Ingredients:

  • ½ lb chicken breast, diced

  • ½ lb shrimp, fresh, peeled, deveined, and chopped

  • 6 cups chicken broth

  • 2 cups scallions, thinly sliced

  • 2 cups green peppers, diced

  • 2 cups okra, sliced

  • 2 cups celery, diced

  • 2 tsp jalapeno, minced

  • 1 tsp garlic, chopped

  • 1 cup diced tomatoes (fresh or canned, no salt/sugar added)

  • 1 tbsp olive oil

  • 1 bay leaf

  • ½ tsp dried oregano

  • ½ tsp onion powder

  • ½ tsp dried thyme

  • ds¼ tsp dried basil

  • ½ tsp sea salt

  • ¼ tsp freshly ground black pepper

Instructions:

  • Heat olive oil in a large, heavy-bottomed soup pot over medium-high heat.

  • Add chicken and saute until cooked through.

  • Stir in peppers, celery, okra, scallions, jalapeno, garlic, and diced tomatoes. Cook until vegetables are tender and tomatoes begin to break down.

  • Add chicken broth, bay leaf, salt, pepper, oregano, onion powder, thyme, and basil. Stir to combine.

  • Reduce heat and simmer gently for 30 minutes, stirring occasionally.

  • Add shrimp and cook until just opaque, about 2-3 minutes. If liquid reduces too much, add a splash of water.

  • 1 remove bay 1eaf. Adjust seasoning; salt and pepper to taste. Serve hot.
