Hearty Chicken and Shrimp Gumbo
A delicious Phase One recipe
Ingredients:
½ lb chicken breast, diced
½ lb shrimp, fresh, peeled, deveined, and chopped
6 cups chicken broth
2 cups scallions, thinly sliced
2 cups green peppers, diced
2 cups okra, sliced
2 cups celery, diced
2 tsp jalapeno, minced
1 tsp garlic, chopped
1 cup diced tomatoes (fresh or canned, no salt/sugar added)
1 tbsp olive oil
1 bay leaf
½ tsp dried oregano
½ tsp onion powder
½ tsp dried thyme
ds¼ tsp dried basil
½ tsp sea salt
¼ tsp freshly ground black pepper
Instructions:
Heat olive oil in a large, heavy-bottomed soup pot over medium-high heat.
Add chicken and saute until cooked through.
Stir in peppers, celery, okra, scallions, jalapeno, garlic, and diced tomatoes. Cook until vegetables are tender and tomatoes begin to break down.
Add chicken broth, bay leaf, salt, pepper, oregano, onion powder, thyme, and basil. Stir to combine.
Reduce heat and simmer gently for 30 minutes, stirring occasionally.
Add shrimp and cook until just opaque, about 2-3 minutes. If liquid reduces too much, add a splash of water.
1 remove bay 1eaf. Adjust seasoning; salt and pepper to taste. Serve hot.
