Tuna Pasta Salad Recipe

PHASE TWO DISH SERVES 1 • READY IN 30 MINUTES OR LESS

In a saucepan over medium heat, bring 2 cups of water to a boil. Add the rotini pasta and peas and cook until cooked through approximately 8 to 10 minutes. Drain and rinse briefly. Put in a bowl and toss with parmesan, green olives, and dill.

While pasta cooks heat a non·stick skillet over medium-high heat. Swirl in olive oil, salt, tuna slice(s), and sear tuna until the desired doneness. Serve on top of pasta and drizzle on the balsamic dressing. Plate with a garnish of mixed salad greens. and fresh dill.

INGREDIENTS

  • ½ package IP rotini pasta

  • 1 cup green peas

  • 6·8 oz fresh tuna loin, pat dry

  • 1/8 tsp salt

  • 1 tsp olive oil

  • 1 oz (28g) parmesan, peeled with a peeler into thin slices

  • 1/4 cup sliced green olives

  • 2 tbsp fresh dill, chopped

  • 1 tbsp IP balsamic dressing
